Creamy Lentil Soup recipe

½ tbsp ghee
1 tbsp rice
2 tbsp arhar/toor dal
½ carrot (chopped)
½onion (chopped)
1 cup water
1 tbsp tomato sauce (optional)
½ cup milk
salt to taste

1. In a pressure cooker heat oil.
2. Add carrot and onion. Sauté for 5 minutes or until tender.
3. Add the rest of the ingredients, except milk. Stir well.
4. Bring to a boil. Pressure cook until lentils are tender.
5. In a mixer blend the lentil mixture until smooth.
6. Heat the puree. Stir in milk. Cook over low heat until thoroughly heated.

This is a complete meal for the baby.

Spinach-and-Cucumber Soup recipe

½ tbsp butter
¼ cup chopped cucumber
¼ cup chopped spinach
1/8 cup cream
1/8 cup yoghurt
salt to taste

1. Melt butter over medium heat. Add cucumber; sauté for 10 minutes or until lightly browned.
2. Add stock; bring to a boil.
3. Cover, reduce heat, and simmer for 15 minutes.
4. Add spinach and bring to a boil. Cover, reduce heat, and simmer for 2 minutes.
5. Blend this mixture in a mixer until smooth.
6. Add yoghurt, cream and salt. Serve at room temperature.

Spinach is a valuable source of high-grade iron.
