South Indian recipes :

Special Full Meal Idli recipe- Dosa recipe - (Serves 4 - 5)

1 tbsp Channa dal
1 tbsp dhuli Moong dal
1 tbsp saboot Moong
1 tbsp Urad Dal
1 tbsp sabbot Masoor
1 tbsp rice
1 ½ tbsp nutrinugget powder - made by grinding nutrinuggets
1 tbsp coriander (finely chopped)
1 tbsp ginger (finely chopped)
salt to taste
1 tsp Eno fruit salt
oil

Idli

1. Soak together all the dals and rice in 3 cups of water, for 4 - 5 hours.
2. Grind the above in a mixer to obtain the consistency of a dosa batter.
3. Add coriander, ginger, nutrinugget powder and salt.
4. Keep the mixture to ferment in a warm place for at least 8 hours.
5. Add Eno salt and mix well.
6. Grease an idli mould with some oil and pour the batter in the moulds.
7. Boil 1 cup water in the pressure cooker. Place the idli container in it, cover with a lid. Do not put the weight on the pressure cooker. Cook on low flame for exactly 10 minutes.
8. Take out the idlis from the moulds, using a knife's sharp edge.

Dosa
Follow the above steps till the 3rd step.

1. Heat a tawa and put a tsp of oil on it. Sprinkle water and wipe it. With a potato cut in half wipe the tawa.
2. Pour 2 tbsp of the batter and spread it like a dosa. Pour oil on its sides. Let it cook on both sides.

Tip - Serve idlis and dosas hot with tomato sauce or coconut chutney.

Variation - Split the idlis in half and sandwich them with green or coconut chutney. Dip the idli sandwiches in a pakora batter. Deep fry and serve hot.
